Ingredients:
- 2 tablespoons Golden Monkfruit Sweetener*
- 2 packages (1 ounce each) Jello Instant Sugar-Free Cheesecake Pudding Mix
- 1 can (15 ounces) pure pumpkin puree
- 16 ounces heavy cream, half-and-half, or milk of your choice
- 1 teaspoon pumpkin spice mix
*Note: Monkfruit sweetener is a plant-based sugar alternative that is generally recognized as safe by the Food and Drug Administration (FDA).
Directions:
- In a mixing bowl, combine the Golden Monkfruit Sweetener, Jello Instant Sugar-Free Cheesecake Pudding Mix, pumpkin puree, heavy cream (or half-and-half or milk of choice), and pumpkin spice mix.
- Using a heavy whisk, mix all the ingredients until fully combined. The pumpkin pudding mixture should be thick. If you prefer a thinner consistency, add more cream.
- Pour the pumpkin pudding into individual serving dishes and chill.
- Can add a sugar-free whipped cream topper for taste and presentation.
